lbs medium zucchini, about 4-5, sliced
large red bell pepper, ribs and seeds removed, sliced
medium Poblano chiles, seeds removed, sliced
tablespoon fajita seasoning mix
Salt and pepper, to taste
Heat the oil in a large skillet over medium-high heat.
Add the zucchini, bell pepper, poblano chiles, onion, garlic and fajita seasoning.
Sauté, stirring often until vegetables are tender, but still crisp, about 5-7 minutes.
Season with salt and pepper to taste.
