You don’t have to have a fancy camera to get a great shot. Use your iPhone to take a cool in-process photo of your egg recipe, or style it and grab a finished shot of your dish. Play with light, capture a dripping yolk, cut into your dish and take a first-bite photo… be creative, and good luck!
Back to my sandwich…it all started with my grandmother. Every time I visited her, she whipped up all kinds of meals and treats that she learned to make growing up in her Swedish household. I remember fig cookies, which I was not fond of at all. And I remember these Denver Sandwiches- always welcome in my tummy. Grandma made them with plenty of butter, and she used white bread with no ketchup.
Dad took over making Denver sandwiches after grandma was gone. He used sweet egg bread, and he added ketchup! Since I remember his method over grandma’s, I’m giving Dad credit for the recipe here. He changed things up a bit, and I liked his version better.
For the Denver part of the sandwich (think “Denver omelette”), you’ll need onion, bell pepper, ham, cheese and eggs. You’ll be scrambling them up into a chunky scramble.
That scrambled Denver is divided between two buttery pieces of toasted egg bread. You can eat these with or without the ketchup. I recommend ketchup!
This is a fantastic breakfast sandwich, but it’s also awesome for lunch or for an afternoon snack. I wish my Dad was still around to see this sandwich of his displayed in full glory on the internet!
I used my favorite Eggland’s Best eggs for this recipe. Biscuit cutter or drinking cup, roughly the same size as the English muffins
Heat the oven to 375°F: Place one rack in the lower third and another rack in the upper third of the oven.
Make the eggs: Whisk the eggs together with the milk and salt in a large mixing bowl. Film a 9x13 baking pan with cooking spray, and pour the eggs into the pan. Place on the lower rack in the oven. Bake until the eggs are puffed around the edges with golden spots, and a paring knife inserted in the middle comes out clean, 25 to 30 minutes. Cool completely.
Make the bacon (optional): Line a baking sheet with foil. Lay the bacon on the baking sheet in a single layer with no pieces overlapping. Turn up the edges of the foil to catch the grease. Place the bacon on the upper rack in the oven and bake until the bacon is crispy, 15 to 20 minutes. When finished, transfer the bacon to a plate lined with paper towels to drain. When cool, break each piece in half to make them easier to fit on the sandwiches.
Slice the cheese: If you haven't already done so, slice 6 pieces of cheese.
Toast the English muffins: When the eggs and the bacon are both finished, place the English muffins cut-side-up on a baking sheet and toast in the oven for just a few minutes, until the edges are toasted. If desired, you can brush the muffins with butter before toasting.
Cut out the egg rounds: Use a spatula to lift the eggs out of the pan and onto a cutting board. Using a large biscuit cutter or drinking glass (roughly the same size as your English muffins), cut 6 rounds out of the eggs. (The scraps can be used to make more sandwiches if you have extra English muffins, or they can go in salads, stir-fries, or other quick meals during the week.)
Assemble the sandwiches: Lay the bottom halves of the English muffins in a row on your counter. Top each one with an egg round, a slice of cheese, and 2 pieces of bacon (if using). Finish by adding the muffin tops.
Wrap the sandwiches for freezing: Wrap each sandwich in a square of aluminum foil. Use a permanent marker to write the contents and date on the sandwich. Put all the sandwiches in a freezer bag or container.
Freeze for up to 1 month.
Reheating instructions: Unwrap the frozen sandwich and place on a microwave-safe plate lined with a paper towel. (The towel helps absorb some of the melting ice so the bread doesn't get soggy.) Heat at full power for 1 to 1 1/2 minutes, or until the cheese is melted and the egg is warmed through. (You can also toast the muffin top separately, if youɽ like!)
Hot breakfast sandwiches for a crowd: You can serve everything right away, if you like! Assemble the sandwiches after all the components are out of the oven, while the eggs are still warm. To melt the cheese, place the open-faced sandwiches in the warm oven for a few minutes, then add the toasted English muffin top.
Refrigerator breakfast sandwiches: You can also refrigerate all the sandwich components separately and assemble them when ready to eat. All the components will keep for up to 5 days.

Generously butter each half of English muffin on both sides. Heat a large griddle or cast-iron skillet over medium.
Toast muffin on griddle, cut side down, pressing slightly until golden brown, about 3 minutes. Flip and toast on other side, pressing slightly until golden brown on other side, about 3 minutes.
Meanwhile, cook BA Breakfast Sausage patty on griddle until browned on 1 side, about 2 minutes.
Flip and top with American cheese cook until sausage is cooked through and cheese starts to melt, about 2 minutes. Turn off heat keep muffin and sausage on warm griddle while you make the eggs.
Heat a knob of butter in a small nonstick skillet (6" is ideal) over medium. Add eggs and season with salt and pepper.
Using a heatproof rubber spatula, cook, lifting edges and tilting skillet to let uncooked egg run underneath, until mostly set but still slightly runny on top, about 2 minutes.
Top with chives and fold eggs over to make a half moon fold in half again.
To serve, top bottom half of English muffin with egg, then sausage. Drizzle with hot sauce and honey, if desired. Close sandwich and stuff your face, cutlery not encouraged.

Why not use a toaster for the English muffin ?
Do you REALLY need a recipe for an egg, sausage and cheese sandwich? Also, 2 pans for 1 sandwich? I think the F not, unless you are coming to my kitchen to wash the dishes.
They were not kidding when the labeled the breakfast sausage and the sandwich as B.A.'s best. Would definitely encourage adding honey as it really blends well with the sausage. Made this as a part of a bday breakfast for my girlfriend and she was very happy and full afterwards!
I like putting the cheese inside the egg/omelette situation. I make this all the time with frozen sausage patties or bacon. I like chives but this sandwich seems purer without them.
Life Hack: Use pork roll instead of sausage. The sausage still rules though. And the American cheese is non-negotiable. The sandwich isn't the same without it.
