Onions and garlic are cleaned, washed, coarsely chopped and lightly sautéed until soft, in enough oil and over low heat.

The peppers are washed, cleaned of stalks and seeds, then cut into rounds.

Add the pepper slices to the saucepan with the onion and garlic and also lightly fry until soft.

Wash the tomatoes and cut them in half, and then cut each half in four.

Add the tomatoes to the pan with the other hardened vegetables. Cover the pan with a lid and simmer until the tomatoes leave the juice.

Wash the zucchini, remove the ends and then cut into rounds 1-1.5 cm thick.

Add the pumpkin slices to the pan with 100 ml of water. Cover the pan with the lid and let the mixture simmer over low heat.

Add the tomato juice and continue simmering the vegetables over low heat.

From time to time, mix lightly in a saucepan so that all the vegetables penetrate well.

When the vegetables have penetrated and the sauce has dropped a little, season the food with: salt, pepper and thyme.
