Recipe: Rubbed beans

This dish reminds me of my childhood. And let me tell you why. When we were children, my parents took us to the sea. With a ticket, stay at a hotel and food provided in canteens, as it was in the time before the revolution. At the canteen where we eat, the menu is displayed every day. One day when we went to eat, we saw written on the menu & # 8220Rhapsody of spring & # 8221. We were curious what kind of food can be hidden under this name. Our surprise was to be served with rubbed beans. And I think his name suited him, because after that I really had rhapsodies. So I'm thinking of keeping his name: Spring rhapsody

Ingredients for rubbed beans
& # 8211 500 grams of dried beans (preferably white beans)
& # 8211 1 large onion
& # 8211 2 teaspoons paprika
& # 8211 salt, pepper
& # 8211 500 grams of mushrooms
& # 8211 2-3 tablespoons of broth
& # 8211 100 ml oil

Preparation Rubbed beans
The dried beans are washed and soaked in warm water, from evening to the next day. This way the beans will boil faster and evenly. Then it is boiled and the water is changed 2 & # 8211 3 times. In the last water, add a little salt and let the beans boil well. You can also boil the beans in a pressure cooker. Then strain it, put it in an enameled strainer. Place the strainer on a saucepan and start rubbing the beans with a wooden spoon, until only the shells remain. Add a little more water to make it easier to pass through the strainer holes. The remaining shells are discarded, so the beans are easier to digest. Put the beans in a saucepan and cook for a few more minutes and adjust the taste of salt.

Usually rubbed beans are good with home-fried smoked sausages or bacon and served with polenta and a cup of millet or sauerkraut.

But if it is fasting, you can serve plain rubbed beans only with onions stuffed with paprika, garlic or mushrooms.

Prepare the mushrooms as follows:
Wash the mushrooms, peel them and cut them into small pieces. Heat the oil in a saucepan, put the finely chopped onion and leave it to harden a little. Add the paprika and finely chopped mushrooms. Put 1 glass of water, salt and pepper and let the mushrooms boil.

Add the broth and keep it on the fire until the sauce drops a little.

Place a layer of polenta on the plate, put the rubbed beans and place the fried mushrooms with onion and paprika on top.

Rubbed beans

We choose the beans, we wash them and if we don't have a miracle pot, it is preferable to soak it in cold water from evening. If we have kukta (pressure cooker) we wash the beans and boil it together with the carrot, parsley, 1 onion, 3 cloves whole garlic, and 1 tablespoon salt and 2 bay leaves. In about 40 minutes it is well cooked.

Strain in such a way that the juice in which the beans were boiled is not thrown away, the pieces of vegetables with which I boiled them are removed. Put the beans in a bowl and with a crusher, crush the beans.

We add a little juice to it to thin it a bit and then we pour the crushed beans in a sieve and we start with a wooden spoon to rub the beans in the sieve so that the core is sifted in another bowl and the hoes remain in screen. If necessary, we can add a little juice to the beans so that they can rub better.

After we finish rubbing the beans, chop 2 onions and grind 2 cloves of garlic. Heat about 150 ml of oil and heat the finely chopped onion, then add the paprika (I put 1 tablespoon) mix well and put the rubbed beans on top and let it blend well with the hardened onion.

If you think the beans are too thick you can add a little juice in which it boiled. It tastes good with salt if needed.

It can be added if you want 2 cloves of crushed garlic with which you let it boil for two.

It is served as a fasting food with fresh bread with pickles, or with baked peppers. But it also goes well with smoked sausages or meatballs.

500 g fresh or smoked sausages

for bean stew:
500 g dried beans or 2 canned beans
1 onion,

200 ml of broth or 3-4 tablespoons of concentrated tomato paste dissolved in water,
1/2 teaspoon dried thyme,
2-3 bay leaves,
1 teaspoon salt,
1/2 teaspoon pepper,

1-2 teaspoons of freshly chopped parsley

Preparation:

The dried beans are cleaned of impurities and then placed in a bowl and covered with cold water. Set aside for a few hours, then change the water. Put the pot on the fire, bring to the boil, boil over high heat for 10 minutes, then drain the water again. Drained water is replaced with boiled water. Put the beans on the fire again. Add salt, then cover and continue to simmer until the beans are soft.

Drain the boiled beans and set aside. If you are in a time crunch, you may as well use canned ready-made beans.

In a frying pan, fry the chopped onion and crushed garlic in oil until they start to bottle. Add the broth or tomato paste, diluted with water, and simmer for a few minutes.

Add bay leaves and thyme, then boiled beans. Add salt and pepper, then mix well and continue cooking on the stove or bake for 30 minutes.

The sausages are fried either in the oven on the grill, on the grill or in the pan. When they are ready, they are put on the bean stalk.

At the end you can add parsley leaves.

Serve with sauerkraut or other pickles depending on preference.
